Our Cocoa Heritage
Some of the best cocoa in the world comes from Trinidad & Tobago, and trinitario cocoa, one of the three varieties of cocoa, is indigenous to the islands. The others are criollo, which is also fine/flavour, and the lower-grade forastero. (Trinitario cocoa is actually an interbreeding of these two varieties.) As the history books attest, cocoa was king in Trinidad & Tobago from the 1860s to the early 1920s, and for a while the country was one of the world’s top five producers.
The Cacoa Tree's botanical name is Theobroma Cacao, which means "food of the gods" in Greek. Cocoa trees require good soil drainage, a humid climate, and regular rainfall. The first fruit takes approximately five years and peak growing period is about 10 years but can extend for several decades. It is the seeds of resulting fruit (the fruit is also known as "pods") that are used in making chocolate. The typical pod contains a few dozen seeds, also known as beans. It takes several hundred processed beans to make up 1 pound of chocolate. Carmel Valley Estate, has always specialised in the process of cocoa production. All the cocoa beans produced by the Estate are exported but visitors can surely have a learning experience on the process of cocoa harvesting and production with trails through the shady cocoa fields and an operational cocoa house. |
