There is nothing like the smell of fresh homemade cocoa simmering in the morning. Now I'm not referring to any store bought tin power... the kind I'm talking about is the real deal beverage made from pure Creole chocolate; grounded fine cocoa beans with all natural cocoa fat and flavor retained. Try our signature, 'Granny approved" recipe, blended with local spices such as nutmeg or tonka bean, bay leaf, some cinnamon and cane sugar, and the full cocoa butter content. Its usually served hot but blended with a few blocks of ice it's a sure treat. ---------------------------------------------------------------------- Cocoa Tea - Creole style 1 1/2 cups water 2-3 tbsp grated cocoa 2-3 tbsp full cream or evapourated milk Bay leaf & Spice Sugar to taste Finely grate cocoa. Bring water to boil with a stick of spice and bay leaf. Add grated cocoa and allow to simmer for 5 to 10 minutes, stirring occasionally. Ensure that it doesn't boil over. Remove from stove. Add milk and sugar and blend well.
